Orange Marmalade ala Alton Brown on Good Eats



 The recipe for Orange Marmalade starts at about 2minutes 23seconds. I've written it out below so just enjoy the video.

Orange Marmalade

Make 10 (8-ounce) jars

Ingredients

  • 1 3/4 pounds oranges, 4 to 5 medium
  • 1 lemon, zest finely grated and juiced
  • 6 cups water
  • 3 pounds plus 12 ounces sugar
  • Special Equipment: 10 (8-ounce) canning jars with rings and lids, funnel, tongs, ladle, and 12-quart pot

Directions

  1. Wash the oranges and lemon thoroughly.
  2. Cut the oranges into 1/8-inch slices using a mandoline, removing the seeds as you go. 
  3. Stack the orange slices and cut them into quarters. 
  4. Place the oranges into an 8-quart stainless steel pot.
  5. Add the lemon zest and juice and the water to the pot, set over high heat and bring to a boil, approximately 10 minutes. 
  6. Once boiling, reduce the heat to maintain a rapid simmer and cook, stirring frequently, for 40 minutes or until the fruit is very soft.
  7. While the fruit is cooking, fill a large pot (at least 12-quart) 3/4 full with water, set over high heat and bring to a boil.
  8. Place 10 (8-ounce) jars and rings, canning funnel, ladle, and tongs into the boiling water and make sure the water covers the jars by at least an inch. Boil for 10 minutes. 
  9. Turn off the heat, add the lids and leave everything in the pot until the marmalade is ready.
  10. Meanwhile, place a small plate in the freezer. 
  11. Increase the heat under the orange mixture to return to full boil. 
  12. Add the sugar and stir the mixture continually, until it reaches 222 to 223 degrees F on a deep-fry or candy thermometer, and darkens in color, approximately 15 to 20 minutes. 
  13. You may need to adjust the heat in order to prevent boil over. 
  14. Test the readiness of the marmalade by placing a teaspoon of the mixture onto the chilled plate and allowing it to sit for 30 seconds. Tilt the plate. The mixture should be a soft gel that moves slightly. If mixture is thin and runs easily, it is not ready.
  15. Remove jars from the water and drain on a clean towel.
  16. Place a canning funnel onto the top of 1 of the jars and ladle in the marmalade just to below the bottom of the threads of the jar. 
  17. Repeat until all of the mixture has been used. The amount of marmalade may vary by 1 to 2 jars. 
  18. Wipe the rims and threads of the jars with a moist paper towel and top each with a lid.
  19. Place a ring on each jar and tighten.
  20. Return the jars to the pot with boiling water, being certain that they don't touch the bottom of the pot or each other. (If you don't have a jar rack, try a round cake rack, or metal mesh basket. Even a folded kitchen towel on the pot bottom will do in a pinch.)
  21. Add additional water if necessary to cover the jars by at least an inch. Boil for 10 minutes. 
  22. Using canning tongs, carefully remove the jars from the water, place in a cool dry place and allow to sit at room temperature for at least 24 hours before opening. 
  23. Once open, store in the refrigerator. 
  24. Unopened marmalade will last for up to 6 months.

Calceolaria crenatiflora


This is a pocketbook plant. The technical name is Calceolaria crenatiflora. It's named the pocketbook plant because of it's it's pouch-shaped flowers. The flowers come in yellow, red or orange. The picture above shows a calceolaria with orange flowers, speckled with yellow dots.
Of course, all I care about is that it's orange!

Yummy Orange Recipes!


Ha! I knew I could find something orange to write about.
Actually, I was kinda stuck when I remembered that I had eaten Orange Chicken yesterday (okay, I also had it today...don't you just love leftovers?)

So I looked for a few recipes. Yeah, so the foods aren't actually orange but this is the best I could do.

The following recipes were found at Orange Recipes.org

Orange Salsa
ingredients list:

2 large oranges, peeled and cubed.
1 tomato, seeded and cubed.
½ jalapeno chili, minced.
½ cup of red onion, minced.
1 tablespoon of fresh cilantro.
1 teaspoon orange peel, grated.
1 teaspoon ginger root, minced.
1 teaspoon garlic, minced.
Pinch of salt.

Instructions:

Combine all of the ingredients, except the cilantro, in a suitably sized bowl.

Place in a refrigerator for about 30 minutes, until chilled.

Stir in the cilantro and serve as desired.



Orange Juice Dressing

ingredients list:

¼ cup of orange juice.
2 teaspoons of red wine vinegar.
1 tablespoon of vegetable oil.
2 teaspoons of honey.

Instructions:

Mix all of the ingredients together.

Use as a dressing for fruit salads.


Orange and Ginger Chicken

ingredients list:

2 Chicken breasts.
1 Orange (Rind).
1 Garlic clove.
1 Glass white wine
Fresh ginger.
Handful of cashew nuts.
Some mushrooms.

Instructions:

Rub the chicken breasts with a mixture of the orange and ginger rind.

Heat the oil in frying pan and add the chicken. Remove chicken and place in a casserole dish.

Fry the mushrooms in the pan with fresh crushed garlic and the cashew nuts, add 1 glass of white wine and pour this over the chicken.

Bake the chicken for 20 minutes.


Orange Muffins
ingredients list:

10 oz of mandarin oranges, drained.
1 medium egg, slightly beaten.
1 ½ cup of flour.
½ cup of sugar.
½ cup of butter.
¼ cup of milk.
1 ¾ teaspoon of baking powder.
½ teaspoon of salt.
¼ teaspoon of allspice.
¼ teaspoon of nutmeg.

Instructions:

Preheat your oven to 350°F (175°C).

Sift the flour with all of the other dry ingredients.

Add the butter.

Mix together the beaten egg and the milk, then add to dry ingredients and mix until just moistened.

Fold in the mandarin orange pieces.

Fill greased muffin tins about three-quarters full.

Bake for 25 minutes.

Orange Biscotti



Ingredients

* 3/4 cup almonds
* 1/2 cup butter
* 2 eggs
* 1 large orange
* 3/4 cup white sugar
* 2 tablespoons orange liqueur
* 1 1/2 teaspoons ground cinnamon
* 2 1/4 cups all-purpose flour
* 1 1/2 teaspoons baking powder
* 1/4 teaspoon salt

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Toast the almonds until golden brown.

3. Let almonds cool, then chop into 1/4 inch pieces.

4. Set oven temperature to 325 degrees F (165 degrees C).

5. Cream the butter and sugar until smooth and creamy.

6. Beat in the eggs until smooth.

7. Zest the orange, add to mixture and stir well.

8. Add the orange-flavored liqueur and cinnamon.

9. Mix in the flour, baking powder and salt. Beat until just mixed.

10.Stir in the chopped almonds.

11.Divide the dough in half on a lightly floured board and form into long rolls, about 2 inches in diameter and 10 inches long.

12.Set the rolls on a cookie sheet and bake for about 25 minutes, or until they are brown on top.

13.Let the rolls cool for 5 minutes, then slice diagonally 1/2 inch thick.

14.Lay slices back flat on cookie sheet and cook for another 10 minutes.

15.Flip biscotti over and cook for another 10 minutes. Let cool on wire racks.

If you keep these in an airtight container, they will keep for months.

The Magic Orange Tree


A tale from Haiti

CRIC? CRAC!

There was once a girl whose mother died when she was born. Her father waited for some time to remarry, but when he did, he married a woman who was both mean and cruel. She was so mean there were some days she would not give the girl anything at all to eat. The girl was often hungry.

One day the girl came from school and saw on the table three round ripe oranges. Hmmmm. They smelled good. The girl looked around her. No one was there. She took one orange, peeled it, and ate it. Hmmm-mmm. It was good. She took a second orange and ate it. She ate the third orange. Oh-oh, she was happy. But soon her stepmother came home.

"Who has taken the oranges I left on the table?'' she said. "Whoever has done so had better say their prayers now, for they will not be able to say them later.''

The girl was so frightened she ran from the house. She ran through the woods until she came to her own mother's grave. All night she cried and prayed to her mother to help her. Finally she fell asleep.

In the morning the sun woke her, and as she rose to her feet something dropped from her skirt onto the ground. What was it? It was an orange pit. And the moment it entered the earth a green leaf sprouted from it. The girl watched, amazed. She knelt down and sang:

Orange tree,
Grow and grow and grow.
Orange tree, orange tree.
Grow and grow and grow,
Orange tree.
Stepmother is not real mother,
Orange tree.

The orange tree grew. It grew to the size of the girl. The girl sang:

Orange tree,
Branch and branch and branch.
Orange tree, orange tree,
Branch and branch and branch,
Orange tree.
Stepmother is not real mother,
Orange tree.

And many twisting, turning, curving branches appeared on the tree. Then the girl sang:

Orange tree,
Flower and flower and flower.
Orange tree, orange tree,
Flower and flower and flower,
Orange tree.
Stepmother is not real mother,
Orange tree.

Beautiful white blossoms covered the tree. After a time they began to fade, and small green buds appeared where the flowers had been. The girl sang:

Orange tree,
Ripen and ripen and ripen.
Orange tree, orange tree,
Ripen and ripen and ripen,
Orange tree.
Stepmother is not real mother.
Orange tree.

The oranges ripened, and the whole tree was filled with golden oranges. The girl was so delighted she danced around and around the tree, singing:

Orange tree,
Grow and grow and grow.
Orange tree, orange tree,
Grow and grow and grow,
Orange tree.
Stepmother is not real mother,
Orange tree.

But then when she looked, she saw the orange tree had grown up to the sky, far beyond her reach. What was she to do? Oh she was a clever girl. She sang:

Orange tree,
Lower and lower and lower.
Orange tree, orange tree,
Lower and lower and lower,
Orange tree.
Stepmother is not real mother,
Orange tree.

When the orange tree came down to her height, she filled her arms with oranges and returned home.

The moment the stepmother saw the gold oranges in the girl's arms, she seized them and began to eat them. Soon she had finished them all, ''Tell me, my sweet,'' she said to the girl, "where have you found such delicious oranges?"

The girl hesitated. She did not want to tell. The stepmother seized the girl's wrist and began to twist it.

''Tell me!" she ordered.

The girl led her stepmother through the woods to the orange tree. You remember the girl was very clever? Well, as soon as the girl came to the tree, she sang:

Orange tree,
Grow and grow and grow.
Orange tree, orange tree,
Grow and grow and grow,
Orange tree.
Stepmother is not real mother,
Orange tree.

And the orange tree grew up to the sky. What was the stepmother to do then? She began to plead and beg.

"Please" she said. "You shall be my own dear child. You may always have as much as you want to eat. Tell the tree to come down and you shall pick the oranges for me", so the girl quietly sang:

Orange tree,
Lower and lower and lower.
Orange tree, orange tree,
Lower and lower and lower,
Orange tree.
Stepmother is not real mother,
Orange tree.

The tree began to lower. When it came to the height of the stepmother, she leapt on it and began to climb so quickly you might have thought she was the daughter of an ape. And as she climbed from branch to branch, she ate every orange. The girl saw that there would soon be no oranges left. What would happen to her then? The girl sang:

Orange tree,
Grow and grow and grow.
Orange tree, orange tree,
Grow and grow and grow,
Orange tree.
Stepmother is not real mother,
Orange tree.

The orange tree grew and grew and grew and grew. "Help!" cried the stepmother as she rose into the sky. "H-E-E-lp...."

The girl cried: Break! Orange tree, Break!

The orange tree broke into a thousand pieces and the step mother as well.

Then the girl searched among the branches until she found .... a tiny orange pit. She carefully planted it in the earth. Softly she sang:

Orange tree,
Grow and grow and grow.
Orange tree, orange tree,
Grow and grow and grow,
Orange tree.
Stepmother is not real mother,
Orange tree.

The orange tree grew to the height of the girl. She picked some oranges and took them to market to sell. They were so sweet the people bought all her oranges.
